KATHY’S HOME & GARDEN TIPS – AFTER THANKSGIVING RECIPES

Turkey Shepherd’s Pie

Brown one half cup each chopped carrots, celery and onion until soft

Add one teaspoon dried thyme

Add two cups chopped cooked turkey

Cover with two cups low sodium chicken broth

Cook ten minutes on medium high until liquid reduces slightly

Pour mixture into 8x8 casserole

Drop small spoonfuls leftover mashed potatoes to make a solid layer on top of the turkey

Bake in a pre-heated 400 degree oven 20 minutes until filling is bubbly

And potatoes are golden

Cheesy Potato Patties

Combine three cups mashed potatoes with two cups shredded cheddar cheese

Add milk a little at a time until mixture is workable

Salt and Pepper to taste

Melt two tablespoons butter in a large skillet, add two tablespoons oil (canola or whatever general purpose oil you have on hand).

Form patties and fry until brown on both sides over medium high heat.

 

Turkey Chili 

Sauté one half cup chopped onion and green pepper along with one chopped and seeded jalapeno (leave in the seeds if you like it hot!)

When veggies are soft add one tablespoon each chili powder and cumin

Add two cans chicken stock and one can chopped tomatoes ( all 15oz)

Add two cups each chopped cooked turkey and whole kernel corn

Simmer 15 minutes so flavors can meld

Check seasonings add salt and Tabasco to taste
