OUR FAVORITE RECIPES - MIDNIGHT SNACK

Ha!  I bet you all thought we forgot. Today we wanted to try a midnight snack (unhealthy of course).  With all this cold Chicago weather, it's time for us to think about staying indoors when snacking is going to occur more often.  I hope you enjoy this little taste of heaven.

Prep Time:  20 minutes

Cook Time:   30-35 minutes

Servings:  15

INGREDIENTS:

1 1/2 c. flour

1/2 c. cocoa

1/2 tsp. salt

1 tsp. baking soda

1 tsp. baking powder

1/2 c. chopped nuts

1 1/4 c. sugar

1/2 c. Crisco or Lenten butter

1 1/2 hot strong coffee

DIRECTIONS:

Sift all dry ingredients into a mixing bowl, except the cocoa. Stir the cocoa into the hot coffee. Add the 1/2 cup Crisco to the hot mixture to melt. Stir into the dry ingredients and mix well. Pour into a greased and floured 9 inch square pan; bake in a 350 degree oven for 30 to 35 minutes. Frost with a chocolate glaze.

VARIATION:

Fruit Brownies: Prepare the Black Midnight cake recipe as above. Add to this batter along with the nuts, 1/2 cup raisins and 1/2 cup coconut. Spread in a 9 x 13 inch greased and floured pan. Bake in a 350 degree oven for 30 minutes. Glaze lightly with a chocolate glaze.
