OUR FAVORITE RECIPES - EATING WELL WITHOUT COOKING

Cathy Mallers PhotoYep, you read that headline right.  During the hot months, especially with the humidity we've been having recently, my need to not cook is definitely on the rise.  Ironically, this is the time when a lot of people eat healthier because cold, refreshing fruits and vegetables get on the menu more.

These couple of recipes are meant to be easy, fast and involve no or very minimal cooking.

Mozzarella and Tomato (a personal favorite year-round)

Thinly slice two large beefsteak tomatoes.  Layer the slices with 4 ounces thinly sliced mozzarella (part-skim if watching your calories).  Garnish with 12 basil leaves.  A variance on this is to add shredded basil.  Sprinkle the stacks with aged balsamic vinegar.  Don't go overboard because you want the flavors to come through.  Some will add a pinch of salt to enhance flavor.  This is a personal preference.

Thai Summer Rolls (easier than you think)

Soak 6 Thai rice paper wrappers in warm water until soft (about 10 seconds).  You can usually find the wrappers in the Asian aisle at your local grocer.  Lay your wrappers flat on a clean work surface.  Add the following items:  1 large cooked shrimp cocktail, 2 cucumber slices, 2 tablespoons of shredded carrot, 1 tablespoon minced scallion (green part only), and 1/2 teaspoon hoisin sauce.  Roll to seal the contents.  You can serve immediately or wrap tightly in plastic and refrigerate for 1 hour.
