OUR FAVORITE RECIPES - SPRING FRUIT SALAD RECIPE

Difficulty:  Easy

Prep Time:  25 minutes

Set Time:  30 minutes

Servings:  8

Sauce:

2 cups Cool Whip

1 pint of strawberry Sorbet 

1/2 cup cream cheese, softened

Ingredients:

2 apples, chopped

1 can Mandarin oranges

1 cup pineapple, fresh, canned or thawed

1 cup sliced strawberries

2 cups additional berries - choose from raspberries, blackberries or blueberries

Add additional fruits based on personal tastes - some suggested fruits are pear, kiwi, mango, peach, plum - do not add banana

Directions:

Mix the sorbet and whipped cream together.  Mixture may be a little lumpy as the sorbet softens.  Add cream cheese in spoonfuls and blend 1-2 minutes with blender.  Mixture may remain lumpy and does not need to be creamy.  Once all mixture is blended, put in freezer to set.

Chop the apples. Slice the strawberries.  Add all fruit to one bowl and toss.  Drain any excess juice from the bowl.  Right before serving, gently blend the sauce and fruit mixture.  Put mixture into several bowls.  Also tastes great over Angel Food Cake.
