OUR FAVORITE RECIPES - CELEBRATING GREEK EASTER
THE FAMOUS FAMILY SAUCE FOR GREEK MACARONI!
If you would like the macaroni recipe, give me a shout. The key to all Greek macaroni is in the cheese so be sure to buy Mizithra cheese, which will bring out the flavor in your sauce.

Prep Time: 30 minutes
Cook Time: 5-6 hours
Servings: 6-10
Ingredients:
Lamb Shoulder cut for Stew 4lbs
1 medium onion
50 whole cloves
1/2 stick butter (not margarine)
Cinnamon, oregano, salt and pepper
1 can Contadina tomato paste
Directions Peel onion. Fill your onion with whole cloves. (This is the fun part for the kids, by the way - ahh memories.)
Brown meat in butter, salt, pepper, and oregano.
While meat is browning take can of tomato paste and thin with water. Add onion to meat. Pour sauce over meat and onion covering it to simmer. Let simmer 1 hour, then add cinnamon to taste - should be slightly sweet but not overbearing. Continue to simmer 4-5 hours, adding water if necessary.
