EASY SUPER BOWL SNACKS!
Super Bowl would not be the event it is without yummy snacks. I've always had a lot of compliments on my Guacamole recipe. Enjoy!
3 ripe Hass avocados ( they should give to gentle pressure, but not too soft)
1 medium tomato small dice (this time of year your best bet is probably a vine tomato, seeded and excess juice discarded)
½ a small red onion small dice
¼ tsp garlic powder
Tabasco to taste
Juice of ½ lime
Mash avocados and mix with all other ingredients. Check seasonings add salt if needed. Some people love the fresh herb cilantro. I've heard you either love it or hate it, no in between. I happen to be in the hate it crowd. But if you love it chop several sprigs and add it at the end. To prevent browning save one of the avocado pits and put it in the bowl. You can also cover with plastic wrap smoothed on the top of the guacamole.
Staying with the dip theme, here is another dip that will really wow your guests.
Layered Taco Dip
1 lb taco meat made with McCormick or Lawry's mix
½ 15oz can Refried Beans warmed in microwave
12oz Shredded Sharp Cheddar
½ jar Chunky Salsa- Heat level of choice
2 medium Tomatoes small dice
Shredded iceberg lettuce
4oz sour cream
Layer on platter according to ingredient list. Put the sour cream in a Ziploc bag. Squeeze into the corner. Snip the smallest bit off. Use like a pastry bag to swirl the sour cream over the top.
Serve both these dips with some real Tortilla chips. Look in the Hispanic food section. Not the snack aisle!
