OUR FAVORITE RECIPES - WARM COMFORT FOOD

Again, you have to thank my Greek heritage for this yummy family favorite.  Aunt Estelle would be so happy I'm sharing this with you.  It's the Greek version of lasagna, but oh so much better.  This one is fabulous!

Recipe Summary

Difficulty: Medium

Prep Time: 30 minutes

Cook Time: 40-45 minutes

Yield: 12 servings

Ingredients:

1 lb. macaroni

½ lb. butter (1 stick for macaroni, 1 stick for #2 sauce)

2 lb. ground meat

½ can or more tomato paste or 1 can tomato sauce

Grated Romano or Parmesan cheese

1 onion, chopped

½ tsp or less cinnamon

Salt and pepper

Sauce #1:  2 eggs, 1 cup warm milk

Sauce #2:  3 cups warm milk, 4 eggs, ½ cup flour, 1 stick butter, ½ tsp salt

Preparation:

Boil water with salt, add macaroni to boiling water, then drain.  Sauté chopped onion in butter; add ground meat and stir until brown; add tomato paste right from can or add a little water.  Add seasoning - salt, pepper and cinnamon - taste.  Cook until the meat is done.

Melt 1 stick butter, and pour half over the drained macaroni, mix carefully.  Mix entire meat sauce with the macaroni.  Over the top of this pour the #1 sauce.  Shake pan so that the sauce will reach the bottom of the pan.

In a saucepan, melt 1 stick of butter and add ½ cup of flour gradually, stirring constantly.  Add the milk and continue stirring.  Add the beaten eggs slowly and cook over low flame until thick, stirring constantly.  Spread over macaroni, sprinkle some cheese on top, and bake in oven for 40-45 minutes at 350 degrees.

Let cool for 10 minutes, cut into squares and serve.
