IWONA'S IN THE KITCHEN BLOG - MOUSSAKA
 

 MOUSSAKA

Recipe Summary

Yeld: 12 serves

Ingredients:

1/3 cup butter

1/3 cup flour

1 teaspoon salt

3 cups hot milk

4 eggs, beaten

2 pounds ground beef

3 medium onions, chopped

3 tablespoons butter

1 teaspoon oregano

1 teaspoon salt

1 teaspoon pepper

1 cup tomato sauce

½ cup fine bread crumbs

4 medium eggplants

Olive oil

½ pound parmesan or Romano cheese, grated

Preparation:

Melt butter, blend in flour and 1 teaspoon salt.  Gradually add milk, cook stirring constantly until smooth and thickened. Cool slightly. Beat a little of the hot sauce into the eggs; add remaining sauce beating constantly. Set aside. Brown ground beef and onions in butter. Add oregano and season with salt and pepper.  Add tomato sauce and heat through. Stir in bread crumbs; remove from heat. Peel eggplants and cut in ½ in slices. Arrange slices on broiler pan, brush with olive oil and sprinkle lightly with salt.

Brown on both sides under broiler. Alternate layers of eggplant slices and meat mixture in large buttered casserole, beginning and ending with eggplant. Sprinkle each layer with cheese.  Pour custard over top; sprinkle with remaining cheese.  Bake at 350 degrees for about 50 minutes or until lightly browned and custard is set. Let stand about 20 minutes before serving. Cut in squares to serve.
