 HERE'S ANOTHER TASTY RECIPE FROM IWONA!

PORK HASH

Recipe Summary

Difficulty: Easy

Prep Time: 10 minutes

Cook Time: 55 minutes

Yield: 4 servings  

Ingredients:  

14 oz/400 g canned chopped tomatoes

2 1/2-3 cups beef stock

1 tbsp corn oil

1 lb/450 g fresh ground pork

1 large onion,chopped

1 red bell pepper, seeded and chopped

2 cups long-grain rice

1 tbsp chili powder

1 lb/450 g fresh or frozen green beans salt and pepper  

Preparation:  

Preheat the oven to 350 F/180 C. Drain the tomatoes, reserving their juices, and reserve. Make the juices up to 3 1/2 cups with the stock and reserve.  

Heat the oil in a large, flameproof casserole. Add the pork, onion, and red bell pepper and cook over medium heat, stirring frequently, for 8 - 10 minutes, or until the onion is softened and the meat is broken up and golden brown. Add the rice and cook, stirring constantly, for 2 minutes.  

Add the tomatoes, stock mixture, chili powder, and beans to the casserole and season to taste with salt and pepper. Bring to a boil, then cover and transfer to the preheated oven to bake for 40 minutes. Serve immediately.
