 HERE'S ANOTHER TASTY RECIPE FROM IWONA!

QUEEN OF PUDDINGS

Recipe Summary

Prep Time: 15 minutes, + 15 minutes standing
Cook Time: 50 minutes
Yield: 8 servings

Ingredients:

2 tbsp butter, plus extra for greasing
2 1/2 cups milk
generous 1 cup superfine sugar
finely grated rind of 1 orange
4 eggs, separated
1 3/8 cups fresh bread crumbs
salt
6 tbsp orange marmalade

Preparation:

Grease a 6-cup/1.5-liter ovenproof dish with butter.

To make the custard, heat the milk in a pan with the butter, 1/4 cup of the superfine sugar, and the grated orange rind until just warm.

Whisk the egg yolks in a bowl. Gradually pour the warm milk over the eggs, whisking constantly. Stir the bread crumbs into the bowl, then transfer the mixture to the dish and let stand for 15 minutes.

Preheat the oven to 350F/180C, then bake the pudding for 20-25 minutes, until the custard has just set. Remove the custard from the oven, but do not turn the oven off.

To make the meringue, whisk the egg whites witch a pinch of salt in a spotlessly clean, greasefree bowl until soft peaks form. Whisk in the remaining sugar, a little at a time. Spread the orange marmalade over the
cooked custard. Top with the meringue, spreading it right to the edges of the dish. Return the pudding to the oven and bake for an additional 20 minutes, or until the meringue is crisp and golden.
