IWONA'S "IN THE KITCHEN" BLOG - HERBED POTATOES WITH ONION

HERE'S A SCRUMPTIOUS SIDE DISH, FROM IWONA!

Recipe Summary

Difficulty: Easy

Prep Time: 10 minutes

Cook Time: 50 minutes

Yield: 4 servings

Ingredients:

900 g/2 lb waxy potatoes, cut into cubes

4 1/2 oz/125 g/1/2 cup butter

1 red onion, cut into 8

2 garlic cloves, crushed

1 tsp lemon juice

2 tbsp chopped thyme

salt and pepper

Preparation:

Cook the cubed potatoes in a saucepan of boiling water for 10 minutes.

Drain thoroughly.

Melt the butter in a large, heavy-based frying skillet and add the red

onion wedges, garlic and lemon juice. Cook, stirring constantly for 2-3

minutes.

Add the potatoes to the pan and mix well to coat in the butter mixture.

Reduce the heat, cover and cook for 25-30 minutes, or until the potatoes

are golden brown and tender.

Sprinkle the chopped thyme over the top of the potatoes and season.

Transfer to a warm serving dish and serve immediately.
