Roasted New Potatoes
If potatoes are large, quarter them. Smaller ones can be cut in half. Use two pounds red or white new potatoes, leave the skin on. Toss them with a ¼ cup extra-virgin olive oil, roast until tender. Serve warm or room temperature.
Buttered Garlic Veggies
Broccoli or green beans work well in this dish. Melt three tablespoons butter in a skillet. Add two thinly sliced garlic cloves. Sauté till fragrant. Toss in three cups of crisp cooked vegetables. Cook until tender but still bright green.
Easy Pasta Salad
Use your favorite Italian Bottled Salad dressing for quick and easy salads. Toss with cooked rotini, black olives, peppers, red onions, tomatoes and cubed mozzarella, kidney and garbanzo beans with onions and celery, sliced tomatoes, cucumbers, green onions.
